Every single crumble we make begins the same way: with a pile of apples on the counter and the quiet decision of which ones make the cut today.

Because not all apples are created equal. And around here, we don’t believe in one-note desserts.

Some apples bake down soft and jammy, melting into that cozy, spoonable filling everyone loves. Others hold their shape, giving you those tender bites that don’t disappear into the background. Some lean sweet, almost honeyed. Others bring a sharp, bright tang that cuts through the richness and keeps everything balanced.

Use just one kind, and you get a good crumble.
Use a mix, and you get something layered. Something that keeps you going back for “just one more bite” until suddenly… it’s gone.

That’s why we blend.

Each batch is a quiet collaboration between different apples, each bringing its own personality to the pan. A little softness here, a little structure there. Sweetness, acidity, texture. It’s less about following a strict formula and more about building something that feels right.

Then, depending on the flavour, we add in whatever else the crumble is calling for. Maybe it’s berries that burst and swirl into the apples. Maybe it’s a hint of spice that warms everything up.
